Red velvet cupcakes! / Sunday, September 1, 2013

So today I decided to bake! Sort of to relief my stress and also for others, to encourage them for EOYs. Asked around and I realised a lot of people like red velvet cake apparently! I've only tried it once and twelve cupcakes, but to be really honest I don't remember the taste so before today, I didn't have much idea what red velvet tasted like. All I knew was that it was red cake with a tinge of cocoa hehe.

Red Velvet Cupcakes:

Ingredients: (Yield 12)

Cream Cheese frosting:

Instructions:
  1. Preheat oven to 350F (175C). Line standard muffin tins with paper liners. Sift together cake flour, cocoa and salt.
  2. With an electric mixer on medium high speed, whisk together sugar and oil until combined. Add egg, beating until incorporated, scraping down sides of bowl as needed. Mix in food color and vanilla.
  3. Reduce speed to low. Add flour mixture in 3 batches alternating with 2 additions of milk and whisking well after each addition. Stir together the baking soda and vinegar in a small bowl and add the mixture to the batter and mix on medium speed for 10 seconds.
  4. Divide batter evenly among lined cups, filling each 3/4 full.
  5. Bake for 20mins until a skewer inserted comes out clean. Transfer to wire rack to cool before frosting with Cream Cheese frosting.
  6. Cream Cheese Frosting: Whisk together cream cheese and butter until creamy and fluffy. Add sugar in 3 batches and continue to whisk until pale. Add vanilla extract and mix to combine.














Final product!

I'm quite happy with the product this time cuz it's been long ever since the cupcakes came out with a smooth top and were mostly uncracked. Yay!!! But then I put on the frosting a little too early cuz by the time it settled in it became a puddle of frosting instead, cupcakes still not cooled enough :-( oh well. The cupcakes a little too moist too, but there's always next time I guess! This recipe is definitely a keeper.

That being said, I just spent my last weekend before the EOYs baking and slacking around. Watched iron man 3 yesterday hehehe, and sort of wasted both my days away but.... oh well I'm just telling myself I need to relief some stress too. But I guess I won't be saying that to myself once I get my results back.

This post was actually to revive my blog (didn't want to let it die again), but I guess I won't be posting much till the end of EOYs too. Should actually get some real studying done, EOYs in 2 days (1 day in 35 minutes).
